Italian Style Stuffed Tomatoes Recipe

1 pound lean ground turkey

1 teaspoon no-salt garlic and herb seasoning

1/4 cup marsala wine

2 fresh basil leaves, finely chopped

4 large beefsteak tomatoes

1 cup Italian-style bread crumbs

1/4 cup grated Parmesan cheese


1. PREHEAT the oven to 350°F. Coat an 8" x 8"baking dish with cooking spray.

2. HEAT a large skillet coated with cooking spray over medium-high heat. Cook the turkey, stirring, for 10 minutes, or until no longer pink. Add the seasoning and wine and bring to a boil. Reduce the heat to low. Simmer for 5 minutes, or until the liquid is reduced by half. Stir in the basil. Remove the turkey mixture to a large bowl using a slotted spoon.

3. HOLLOW out the insides of the tomatoes, leaving a 1/4" shell. Chop the tomato pieces and add to the turkey mixture. Stir the bread crumbs and cheese into the turkey mixture. Loosely stuff the tomato shells with the turkeymixture. Place in the prepared baking dish. Cover and bake for 30 minutes, or until the tomatoes are soft.
