Summer Berry Cake 

Diabetic Cake Recipes #1

SERVES: 10

Ingredients

CAKE

2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/4 teaspoon salt

6 tablespoons trans-free margarine or butter, softened

1/2 cup splenda brown sugar

1 egg

1 egg white

3/4 cup fat-free vanilla yogurt

2 tablespoons fat-free vanilla yogurt

1 cup fresh strawberries, hulled and sliced

1 cup fresh blueberries

TOPPING:

1/4 cup trans-free margarine or butter, softened

1/3 cup packed brown sugar

1/2 cup all-purpose flour

3/4 teaspoon ground cinnamon

Confectioners' sugar (optional)

Directions

1. Preheat the oven to 350°F. Generously coat a springform pan with cooking spray and lightly dust with flour.

2. To make the cake: In a medium bowl, combine the flour, baking powder, and salt.

3. In a large bowl, with an electric mixer on medium speed, beat the margarine or butter and granulated sugar for 1 minute, or until fluffy. Beat in the whole egg and egg white until thoroughly combined. With the mixer on low speed, add the flour mixture, 1 cup at a time, alternating with the yogurt and beating well after each addition. Spread the batter in the springform pan and layer the berries on top.

4. To make the topping: In a medium bowl, combine the margarine or butter, brown sugar, flour, and cinnamon until the mixture resembles coarse crumbs. Sprinkle evenly over the berries.

5. Bake for 50 minutes to 1 hour, or until the top is light brown and a wooden pick inserted in the center comes out almost clean. Cool completely in the pan, then run a knife around the outside edge and release the ring. Dust with confectioners' sugar, if desired, and serve.

Banana Loaf

SERVES: 10

Ingredients

1 1/2 cups whole wheat pastry flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

pinch of salt

1/2 cup splenda brown sugar

1/4 cup ground flaxseed

2 large eggs, beaten

1 1/2 cups mashed ripe bananas (2 to 3 bananas)

1/4 cup canola oil

1/4 cup fat-free milk

3/4 teaspoon pure vanilla extract

Directions

1. Preheat the oven to 350°F. Coat a 9"x 5"x 3" loaf pan with cooking spray.

2. In a bowl, combine the flour, baking powder, baking soda, and salt. Stir with a fork to mix.

3. In another bowl, combine the sugar, flaxseed, and eggs. Stir to mix. Add the bananas, oil, milk, and vanilla extract. Stir to mix. Add the flour mixture. Stir just until all the flour mixture is absorbed. Pour the batter into the prepared pan.

4. Bake for about 50 minutes, or until a wooden pick inserted in the center of the loaf comes out clean. Transfer to a rack to cool for 10 minutes. Remove from the pan and cool completely.

Pumpkin- Maple Cheesecake

Ingredients

3 packages (8 ounces each) fat-free cream cheese, at room temperature

2/3 cup packed brown sugar

3 large eggs

1 can (15 ounces) pure pumpkin

1/2 cup low-fat maple or vanilla yogurt

2 tablespoons all-purpose flour

1 1/2 teaspoons ground cinnamon

1 teaspoon ground ginger

1 teaspoon maple or rum flavoring

1 teaspoon vanilla extract

1 1/2 cups toasted pumpkin seeds

Directions

1. Preheat oven to 350°F. With an electric mixer, beat together cream cheese and brown sugar until smooth. Beat in the eggs one at a time. Blend in the pumpkin, yogurt, flour, cinnamon, ginger, maple or rum flavoring, and vanilla extract. Pour the filling into a 9" springform pan coated with nonstick cooking spray.

2. Bake 1 hour and 10 minutes. Remove from the oven and run a knife around the sides to loosen. Let stand at room temperature for 30 minutes.

3. Chill the cake, uncovered, until cold. Then cover with foil and chill at least 4 hours (or up to 3 days).

4. When ready to serve, carefully remove sides of the pan. Sprinkle each serving with 2 tablespoons of the pumpkin seeds.

Simple Strawberry Cheesecake

Ingredients

CRUST:

1 cup graham cracker crumbs (see baking tip)

1/4 cup milled flaxseeds

1/4 cup raw oat bran

1 ounce fat-free cream cheese, warmed in the microwave

1/3 cup water

FILLING:

2 cups low-fat cottage cheese

1 package (28 grams) powdered jell-o sugar free, fat free instant pudding, cheesecake flavor

3 ounces fat-free cream cheese

TOPPING:

1 cup sliced strawberries

4 tablespoons sugar-free strawberry jam

Directions

1. To make the crust: Coat a 9" pie pan with cooking spray.

2. In a large bowl, mix the graham cracker crumbs, flaxseeds, oat bran, cream cheese, and water. Stir the mixture until it's all the same consistency, then press it into the prepared pan, easing the crust up the sides of the pan.

3. To make the filling: Blend the cottage cheese, pudding mix, and cream cheese in a blender on high until smooth and creamy. Pour the blended mixture into the crust and refrigerate for 1 hour. Top with the strawberries and jam.
