Banana Muffins with Splenda

These Banana Muffins have no sugar but have Splenda instead. So if you counting calorie, watch your weight or controlling you sugar these muffin are perfect.


1 1/4 cups flour

1 tbsp flour

3 tbsp Splendia brown sugar, packed

1 1/2 tsp baking powder

1 tbsp pumpkin pie spice

1 cup bananas, mashed

1/4 cup skim milk

3 tbsp applesauce, at room temperature

1 egg white, whipped


  1. Preheat oven at 350. 
  2. Prepare 6 muffin pans with cooking spray and flour.
  3. In a mixing bowl, combine flour, sugar, baking powder, and pumpkin pie Spices. 
  4. In another mixing bowl, combine bananas, milk, applesauce, and egg
  5. white. 
  6. Mix dry ingredients with wet ingredients just until moistened.
  7. Use an ice cream scoop to fill muffin tins 2/3 full. Bake 20 minutes, or until light brown.

NOTES : Optional: Double all spices
